Puff Pastry for Quiche

This puff pastry is so good that you could be tempted to serve it without a filling as cookies. No, seriously. Yes, you can always buy a ready-made pie shell. But after you taste this puff pastry once, you will never want to go back to ready-made.

Ingredient:s:

  • 1 cup (250 ml) cake and pastry flour
  • ½ cup (125 ml) sweet (unsalted) butter, chilled
  • ¼ (60 ml) cup ice water

Instructions:

  1. Mix (with hands) all ingredients, chill well
  2. Roll out on floured surface, fold like a handkerchief
  3. Chill again well, and repeat above step several times until pastry is smooth and can be rolled out into the pie shell

Serving Recommendation: Vanilla Ice Cream:

Yield: One large pie shell
