Apple Tarts

Historical Note: This is an easy recipe that can rely on ingredients likely available in most pantries. Perfect for extenuating circumstances such as the Covid-19 lock downs of 2020, when shopping is difficult.

Ingredients:

  • 2 eggs, lightly beaten
  • ½ cup (125 ml) white sugar (or brown is fine)
  • 1 tsp. (5 ml) cinnamon
  • 3 apples, peeled, cored and chopped (any kind is fine)
  • 1 cup (250 ml) raisins or currents
  • 1 cup (250 ml) chopped nuts (walnut, macadamia, pecans)
  • Dusting of flour
  • 1 package frozen puff pastry (or home made, see below)
  • Butter to grease pan

Instructions:

  1. Defrost puff pastry according to package instructions
  2. Prepare 6 oven proof ramekins and grease with butter
  3. Pre-heat oven to 350 degrees
  4. Meanwhile lightly beat eggs, sugar and cinnamon
  5. Add chopped apples, raisins and nuts
  6. Fold in a sprinkling of flour (about ¼ cup)
  7. Place 1/6 of the pastry in each ramekin, dust bottom with flour
  8. Divide filling between the 6 ramekins
  9. Bake in 350 degree oven for approximately 30-40 minutes, until the pastry is golden brown and apple mixture is sizzling

Serving Recommendation: Vanilla Ice Cream:

Yield: 6 Individual Pies or Tarts
